I've finally perfected the quiche and I had to blog about it! And Scotty is going to laugh at me for sharing this. But honestly, I have tried and tried and failed at so many different quiche recipes, but I finally found the one. It's the original one, but with a twist. Allow me to share.
Easy Quiche
1 1/2 cups shredded cheddar cheese
2 tablespoons flour
1 cup milk
3 eggs, slightly beaten (or 4 eggs if you have medium size)
1/2 cup grated parmesan cheese (opt.)
9" unbaked pie shell
1 dash of pepper
Any leftover ham or lunchmeat cut into pieces
Spinach, THAWED IF FROZEN, and drained if possible (very important!)
1. Toss the cheddar with flour in a medium-size bowl.
2. Add milk, eggs, parmesan, ham and pepper. Mix well.
3. Pour into unbaked pie shell.
4. THEN add the spinach on top. Only on top. Don't mix in except for slightly. (I've discovered that if you try to mix the spinach in with the batter, it turns out very watery and doesn't ever set.)
4. Bake 350F for 50-60 min or until set.
Yum! Now here's the next part that I am actually even more proud of - I made my own pie crust!!!

Caffeine
Oh! I forgot to tell you my caffeine story.
So as soon as Scott and I decided we were going to see the midnight showing of Batman, I realized I was going to need a little extra help staying awake. You see, usually I am o.u.t. by 10 or 11pm. No way was I going to be able to stay up without some caffeine in my system.
I know! Totally not like me, right?
We went to the diner where we filled a little 8oz glass with Coke. I drank probably 3/4 of it. And I was fine for a little bit, but suddenly, it's like it hit me all at once. I could feel the energy building up. I started laughing and crying so hard. Both. I didn't know what one I was doing. Tears were streaming down my face. My heart was beating. I couldn't catch my breath. Then after the initial onsurge, I was up. I was dancing, walking, running, leaping around the diner. I was playing dance-dance on the black tiles. I was hopscotching. I was stretching and doing who-knows what else.
And this is why Nancy should never drink caffeine.
But I was able to stay WIDE awake during the whole movie and then after too! I could have stayed up all night! Woo!

Dark Night/Scotty's Birthday
As you know, "The Dark Knight Rises" came out on Scotty's birthday. I debated whether or not to take him to the midnight premier, but once I told him my idea, there was no turning back. So we bought some last minute tickets and went to the 11:59pm showing of Batman at the Thanksgiving Point Theater (assigned seating - yeah!).
Here is my review on the movie:
Dark. Violent. Loud. Twists, twists, twists. But all in all, a very good movie, once it was wrapped up nicely together. Compared to Avengers....Avengers is fantasy. Batman is real. And the whole time I was thinking, wow, I can't believe we watch this stuff for fun. I had to turn my head away several times.
And I was completely oblivious as to what was going on just a few hours east of us. I can't even imagine. What we were watching for ENTERTAINMENT was at that very second happening to people in real life. It really was a dark night for them. I still can't get over just how WRONG that is and how awful we have all become to even like stuff like this on TV.

And will it keep me from watching movies with my husband still? No, probably not. Which is really sad.
Friday evening, we went out to eat at his favorite Asian Buffet in AF. Then we went to Target and walked around. Last time we walked around that Target, I was a very pregnant lady! Then we took the long way home. It was very relaxing and nice to hang out with Scotty.
Many thanks to our moms for being such great babysitters during our birthday adventures.
And no, I don't have any pictures. I'm sorry!
And also...how many of you think the new Wendy's on Center St in Orem looks just like the many McDonald's now?

4th
I'm still around.
The 4th of July was really fun! We got up early, drove to the parade, cheered Scott's sister on as she ran the 5k Freedom Run, ate breakfast at Nellie's, then we (meaning I) ate chocolate Twizzlers while we watched the Freedom Festival Grand Parade on University Ave in Provo. Hailey was just darling, but tired.
Then my camera died. P.S. Did you know Spanish Fork has a drum corps of sorts?? It was SO awesome! Straight brass an drum line. They look and sounded awesome. Sorry I don't have a picture.
And Stephanie Nielsen was the Grand Marshall! I think that is really neat. I don't read her blog much anymore, but I still really admire her.
After the parade, we went to the park with Scott's family and had a picnic. Then we went swimming! It was very nice to cool off.
Scotty and I were planning on spending the rest of the evening very quietly in our home, but we ended up stopping by my family's house and...ended up staying the rest of the evening. So much for quiet! But I am glad, because we ended up getting to Skype Tom in Afghanistan and I showed him his niece, Hailey! He is doing great.
I am grateful for this country and the freedoms we enjoy. Happy late 4th of July!

4 Months Old!
You can definitely tell that Hailey has grown this month. She gained a whole three pounds and grew two inches from her 2 month check up! Although she is still small, I am very pleased with this progress. She has officially doubled her birth weight!

Weight: 11lbs 7oz (10%)
Height: 21" (10%)

Milestones to be proud of this month:
- Supported sitting
- Head holding while on tummy
- Actually tolerating tummy time!
- Rolling over from tummy to back multiple times!
- LOTS of coo'ing and ah'ing. She really likes to talk!
- Holding things
- Staring/looking at things
- Big smiles and bigger laughs!
- Loves bath time and splashing
- Loves to kick her legs and arms when she's happy.
She tolerated her shots well. There was that instant when she got stuck that her face froze and was trying to figure out just what happened to her. It was so sad! She got a slight fever that night and wasn't all too happy the next morning, but she is just fine now and happy as can be!
I look forward to this next month and what it will bring for us. We've started adding rice in her milk (which....she's not quite sure how she feels about it yet), and soon we will try spoon-feeding her!
I love my little skinny girl and am glad she's growing healthy and strong!!
